Dr. Pepper Cupcake Recipe


Saturday I woke up with the desire to bake. I checked my Pinterest board and I found a pin entitled Dr Pepper cupcakes. I love Dr. Pepper, even though I don’t drink it as much since I gave up soda. Since Myke loves it as well, it sounded like a good place to start in my baking journey this year. Myke looked up another recipe and found a great one on the blog Homemade Hooplah. 2 cup all-purpose flour

1 tsp baking soda

1/4 cup cocoa powder unsweetened

1 cup unsalted butter softened to room temperature

1 cup granulated sugar

1/2 cup brown sugar packed

2 egg room temperature 

2 tsp vanilla extract

1 cup Dr Pepper

1/2 cup buttermilk

The (amazing) Cream Cheese Frosting:

4 cup powdered sugar

1/2 cup unsalted butter softened to room temperature

6 oz cream cheese softened to room temperature

4 tbsp Dr Pepper to taste 


Preheat the oven to 350 degrees F. Prepare muffins tin by adding cupcake cup liners (22-24 total).

In a medium bowl, sift together flour, baking soda, and coca powder. Set that aside for later.

Using a stand mixer, add in butter, granulated sugar, brown sugar, eggs, and vanilla. Beat on low until fluffy, about 2-3 minutes.

Keeping mixer speed on low, add half of the dry ingredients to the wet ingredients. Mix in the Dr. Pepper. Add the other half of the dry ingredients as well as the buttermilk. Mix until just combined. Batter should be thick and fluffy.

Pour cupcake batter into prepared muffin tin, filling cups 2/3 full. We used a cookie scooper to help with the consistency-try using a spoon or an ice cream scooper. 

Bake cupcakes for 18-20 minutes or until a toothpick tester comes out clean. I always start with the lowest time and then check them and then add 2-4 minute increments. 

Let the cupcakes cool. Remember to wait until cupcakes are completely cooled before applying the frosting.

For the Dr Pepper Cream Cheese Frosting

Use a stand mixer on high speed to beat the softened butter until smooth and creamy, roughly 2 minutes.

Drop speed to low and slowly add the powdered sugar. Frosting may be and clumpy at this stage – that is okay.

Keeping speed on low, slowly beat in cream cheese. I’d recommend cutting the cream cheese into 4-5 pieces and mixing in one piece at a time.

Finally, add in the Dr Pepper. We added in the 4 tablespoons, tasted, and then added a little bit more. That’s the fun part about this frosting, you can make it as simple or strong as you like. 

To be honest, they weren’t exactly as I had planned-imagine that! Some of the cupcakes didn’t have enough batter in them so they did not look like a cupcake was supposed to look-but that will come with practice! Instead of keeping them in the house where Myke and I would eat every single one, we took them to our church for a couple events we had going on. This gets me excited to do more baking!
