Let’s Bake Rocky Road!

The Holidays are here and it’s my favorite time of year, mostly because it’s Rocky Road Season! This is a staple in our family. Every year my mom would make a batch for Thanksgiving and one for Christmas. And I would always end up eating at least half of the batch.

Rocky Road

This is a family recipe that takes almost no time to make, and is sure to wow at your next holiday party!

Equipment

  • Big Pot
  • Aluminum/Glass Pan 9×12

Ingredients

  • 1 can UNSALTED Dry Roasted Peanuts
  • 1 can Sweetened Condensed Milk
  • 1 tbsp Unsalted Butter
  • 1 bag Jet Puffed Mini Marshmallows ***ONLY USE JET-PUFFED***

Instructions

  • Melt the butter in the biggest pan you have.
  • Add in can of Sweetened Condensed Milk (Let it heat up a little bit).
  • Add in your Semi-Sweet Chocolate, and stir, stir, stir until melted.
  • Remove from heat and add Peanuts.
  • Stir in Peanuts, then add Marshmallows.
  • Once it's evenly mixed, add to 9×12 pan, smooth out and refrigerate for at least 1 hour.
  • Cut into squares and enjoy!

My mom has this like “Tea-Tray-Thing” with three layers of plates, and for years, she would always keep some sort of treat on them. During the holidays this was the Rocky Road Tower! It would be stacked to the top with layers of chocolaty goodness! When we lived in Phoenix, the treat tower was in the main walkway through the kitchen to the living/TV room. So it became a thing to just grab a piece every time you got up. Get a drink of water? Rocky Road. Go to the bathroom? Rocky Road. Throw something away? Rocky Road. Eat a Snack? ROCKY ROAD.

When Allison and I got married, I undertook the process of learning how to make it and become the “Keeper of the Recipe.” You know the person that learns the family recipe and becomes the designated person to make and pass it on to the next generation. If you don’t know what I’m talking about, start learning those family recipes and become the Keeper yourself.

My mom was the keeper of the Rocky Road, my aunt is the keeper of my grandmother’s enchiladas, my dad knows the pork tacos recipe we eat every Christmas. And now I’m the keeper of the Rocky Road (Although my mom still makes it when we come over), and our Green Bean Casserole.

Now, I make it whenever I’m invited to a holiday potluck, and as gifts for friends. Until now, I’ve never shared the recipe. Hopefully, I don’t get exiled from the family for revealing how simple this treat is!
